3-Ingredient Pumpkin Muffins

These muffins could also be called "World's Easiest Pumpkin Muffins". All it takes is 3 ingredients to make super-moist pumpkin muffins. I made a batch to have for breakfast on-the-go; just freeze then pop in the microwave for 60 sec on high to defrost. I adopted this recipe from one I found on allrecipes.com

Ingredients

  • 1 (18.25 ounce) package spice cake mix
  • 1 (15 ounce) can pumpkin puree
  • 1/2 cup unsweetened applesauce

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12 cup muffin pan or line with paper liners.
  2. Combine the cake mix, pumpkin puree, and applesauce in a large bowl. Beat with electric beaters on low for 2 minutes. Batter will be very thick. Spoon equal amounts of batter into the prepared muffin cups. Smooth out the batter if you want a smooth muffin top.
  3. Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted in the center of one comes out clean.
Makes 12 muffins

Each muffin has approximately 200 calories

Alternately, make 6 jumbo muffins. Bake at 350 for approximately 30 minutes.
