Old-Fashioned Cherry Pie

I think cherry pie is my favorite summer pie, when sweet cherries are at their peak. I've made this recipe the last 2 years at Father's Day and it's always a hit. Plus, there are only 7 ingredients; I only had to buy 2 ingredients (cherries and pie crust) when I went to store.

Ingredients:
5 cups cherries
3 TBS granulated tapioca
1 cup sugar + extra for topping
1/4 tsp almond extract
1 TBS butter
1 double pie crust
1 egg, lightly beaten

1. Pit and halve 5 cups cherries.

2. Turn on oven to 400F. Mix cherry, tapioca, sugar, and almond extract in a large bowl. Let stand 15 minutes.

3. Fill 9-inch pie crust with the fruit mixture.

4. Dot with 1 TBS butter.

5. Cover with top crust; cut several slits in top crust or make a lattice top. Brush top crust with egg wash (1 beaten egg mixed with a little water) and top with a sprinkling of sugar.

6. Bake at 400 for 45-50 minutes. Let cool completely.

Enjoy!
